Day 4 – Lunch: Tuna and Egg Salad Lettuce Wraps

Ingredients:

  1. 7 hard boiled eggs, with two cooked yolks removed.
  2. 2 cups of spinach leaves sautéed
  3. 1 yellow onion
  4. 1 clove garlic
  5. 1 can tuna (in olive oil)
  6. 1/3 cup scallions
  7. 1/3 cup avocado, paleo mayo (suggest primal kitchens)
  8. ¼ cup olives, diced
  9. 1 Tbsp lemon juice
  10. ½ tsp salt
  11. ¼ tsp pepper
  12. ¼ tsp paprika
  13. 1/8 tsp chili powder (if desired for spicier)
  14. 5 large lettuce bibs
  15. 1 avocado diced

Instructions:

  1. Boil the eggs for 12 minutes and discard the 2 yolks.
  2. Chop the eggs and place in a mixing bowl with the rest of the ingredients.
  3. Stir lightly until everything has combined well.
  4. Take a large spoonful and put on one lettuce bibs.
  5. Continue the same for the rest of the lettuce bibs.
  6. Top off with avocado and enjoy!
