That makes us happy.  Certainly not your typical cooking show but we did want to make it more of a real adventure and that it is.

Chicken Stir Fry

Ingredients:

  1. 1 Tbsp coconut oil
  2. 1 lb frozen chicken strips
  3. 1 tsp Himalayan salt
  4. ½ tsp black pepper
  5. 1 tsp ground ginger
  6. ½ medium green cabbage
  7. 10 broccolini stems
  8. 1 large carrot chopped
  9. 1 clove garlic
  10. ½ yellow onion chopped
  11. 1 tsp fish sauce
  12. 3 Tbsp coconut aminos
  13. 2 Tbsp lime or lemon juice
  14. 1 tsp sesame oil

Instructions:

  1. Thaw chicken in advance
  2. In a large wok, heat coconut oil over medium heat.
  3. Add the chicken strips, and season with salt and pepper.
  4. On each side, cook for 3 minutes and remove from heat. Place in a bowl with the added juices, and set aside
  5. Over medium heat again, add another drop of oil to the pan. Add in the onions, cabbage, broccolini, carrots and cook thoroughly for 2 minutes.
  6. Add in a splash of water, garlic, fish sauce, coconut aminos, lime juice and return the chicken meat to the pan.  Continue mixing while cooking for 2 more minutes. Finish with adding sesame oil, stir and serve hot!
