
Burrito Bowls
Ingredients: For the Meat
- 1 Tbsp olive oil
- 1 lb ground beef
- ½ red onion diced
- 1 clove garlic minced
- ¼ tsp ground cayenne pepper
- ½ tsp ground paprika
- ½ tsp sea salt
- ¼ tsp dried cumin
Ingredients: For the Salsa
- 2 large tomatoes diced
- ½ red onion diced
- Handful of fresh cilantro chopped
- 1 red chili pepper
- Juice of 1 lime
- Pinch of salt
- 1 medium avocado, cubed into small pieces
Vegetables:
- Cauliflower rice (store purchased or homemade)
Instructions:
- To make the salsa: dice all your ingredients and mix them together in a small bowl. Place in the fridge.
- Next, place a pan on medium heat, then add your oil, onion and garlic. Cook for 2 mins.
- Add in your beef and seasonings. Brown for about 5-10 minutes, till meat is cooked through. Set aside.
Instructions: For the Cauliflower Rice –
- You can buy frozen or fresh cauliflower rice
- Saute in olive oil until slightly browned.
- Once done, construct your bowl – cauliflower rice, shredded lettuce, meat, salsa and jalapeños. Garnish with cilantro leaves.
- Serve and enjoy.
