Burrito Bowls

Ingredients: For the Meat

  1. 1 Tbsp olive oil
  2. 1 lb ground beef
  3. ½ red onion diced
  4. 1 clove garlic minced
  5. ¼ tsp ground cayenne pepper
  6. ½ tsp ground paprika
  7. ½ tsp sea salt
  8. ¼ tsp dried cumin

Ingredients: For the Salsa

  1. 2 large tomatoes diced
  2. ½ red onion diced
  3. Handful of fresh cilantro chopped
  4. 1 red chili pepper
  5. Juice of 1 lime
  6. Pinch of salt
  7. 1 medium avocado, cubed into small pieces

Vegetables:

  1. Cauliflower rice (store purchased or homemade)

Instructions:

  1. To make the salsa: dice all your ingredients and mix them together in a small bowl. Place in the fridge.
  2. Next, place a pan on medium heat, then add your oil, onion and garlic. Cook for 2 mins.
  3. Add in your beef and seasonings. Brown for about 5-10 minutes, till meat is cooked through. Set aside.

Instructions: For the Cauliflower Rice –

  1. You can buy frozen or fresh cauliflower rice
  2. Saute in olive oil until slightly browned.
  3. Once done, construct your bowl – cauliflower rice, shredded lettuce, meat, salsa and jalapeños. Garnish with cilantro leaves.
  4. Serve and enjoy.
